This little round neck sweater with button side opening is a simple and fun knit to do in between those complicated projects, and is a great start for practicing an easy fair isle pattern for those who are new to this technique. Pattern comes with a Fair Isle chart, plus written instruction for the Chart, row by row.
A suggested yarn is shown below. You only need a small quantity of contrast colour.

if you're doing different sizes, the pattern on the front could be a bit confusing for a beginner, but overall, great pattern.
